One time I decided I wanted to be vegetarian. It lasted about a week. My husband LOVES meat. In fact, when he orders a sandwich or a hamburger it's always plain-meat and cheese. Pretty much every meal we eat meat is the main course.
Lately I've been feeling grossed out by meat again. I'm not sure if it's pregnancy or what but I just don't want it. I have a friend who just posted on her blog about her and her husband's journey to becoming vegetarians. She told me it took her about 2 years to switch over completely. I think that's where I went wrong before. I didn't know enough so to make the switch cold turkey was overwhelming. I've decided to start with for sure once a week make a vegetarian meal. If I choose I can make more, but the hubby has agreed to only eat one for now. Today I made bean and rice burritos. They were delicious.
Ingredients:
Pinto beans-warm them up
Brown rice-I just use instant
mix in rice:
juice from 1 lime
dash of cumin
little bit of fresh cilantro
pinch of salt
I bought whole wheat tortillas. I cooked them on a frying pan. Spread a little sour cream on it, added the rice, beans, and some cheese....Delicious.
I know it's simple. But I loved it. Little Zoo loved it. Hubby ate it. Success!
